  • Hidden Valley Chicken Drummies
    20 chicken drummies
    Good 1/4 c. butter melted
    1 tbsp. hot pepper sauce
    2 tbsp. vinegar
    2 pkgs. Hidden Valley dressing mix
    Paprika
    Celery sticks
    Dip chicken in mixture of melted butter pepper sauce and vinegar. Put in baking pan. Sprinkle with 1 package dry dressing mix. Bake 30 minutes at 350 degrees or until browned. Sprinkle with paprika. Serve with celery sticks and prepared Hidden Valley dressing mix as dip.
  • Lemon Chicken Sauce
    4 1/2 tbsp. sugar
    4 1/2 tbsp. lemon juice
    4 1/2 tbsp. chicken stock
    3/4 tsp. salt
    2 tsp. cornstarch
    1 1/2 tsp. sesame oil
    1 1/2 tsp. yellow food coloring
    (optional)
    Rind from lemon
    Several drops lemon extract
    Cook sauce until thick over high heat stirring constantly. Pour sauce over cooked chicken pieces. Serve hot.
  • Sweet & Sour Chicken
    2 pkg. boneless chicken
    2 bell peppers
    1 lg. onion
    1 tbsp. flour
    2 jars Sweet & Sour Sauce
    1 c. flour
    1 c. oil
    Salt & pepper as desired
    Heat 1 cup oil. Wash chicken pieces and dry salt and pepper as desired. Roll chicken in cup of flour and deep fry until crispy. Remove and drain. Drain all but a small amount of oil from skillet and saute onion and bell pepper for 5 minutes. Add chicken and 1 tablespoon of flour to onions and peppers saute for 5 additional minutes. Add sweet and sour sauce to contents. Cover and allow to simmer for 15 minutes. Serve over rice.
  • Marinated Chicken Breasts
    6 very sm. whole chicken breasts
    boned or 3 lg. ones cut in half
    3 med. cloves garlic crushed
    1 1/2 tsp. salt
    1/2 c. brown sugar packed
    3 tbsp. grainy mustard
    1/4 c. cider vinegar
    Juice of 1 lime
    Juice of 1/2 lg. lemon
    6 tbsp. olive oil
    Black pepper to taste
    Put the chicken breasts in a shallow bowl. Mix garlic salt sugar mustard vinegar and lime and lemon juices. Blend well. Whisk in olive oil and add pepper. Pour over the chicken and refrigerate overnight covered. Turn over. Remove from the refrigerator 1 hour before you want to cook and let come to room temperature. Grill approximately 4 minutes per side or until done.
  • Bake Turkey Wings
    Start with a layer of turkey wings in a larger roasting pan. Top with 2 cans cream of chicken soup. Then sprinkle with 1 envelope of Lipton onion soup mix. Then repeat the same two more times. Add 1/2 cup of water and seal with foil paper and bake at 350 degrees for 3 to 4 hours or until tender.
