  • Southern Comfort Punch
    1 fifth Southern Comfort
    3 qts. 7-Up
    1 (6 oz.) fresh lemon juice
    1 (6 oz.) frozen orange juice
    1 (6 oz.) frozen lemonade
    Chill ingredients. Mix in punch bowl adding 7-Up last. Stir. Add ice ring.
  • Microwave Nachos
    Ingredients are per person
    30 Tortilla Chips
    1 1/3 ounce can jalapeno bean dip
    1&1/2 cups grated cheddar cheese
    1. Spread beandip on each tortilla chip. Top with some cheese place evenly on paper plate.
    2. Microwave at medium high level for 1 min or untill cheese is melted
  • Brandy Citrus Slush
    7 c. water
    2 c. sugar (boil 3-4 minutes let
    cool)
    2 c. boiled water with 4 green or
    regular tea bags cooled
    1 (12 oz.) can frozen orange juice
    concentrate
    1 (12 oz.) can frozen lemonade
    concentrate
    1-2 c. brandy (may use amaretto
    vodka whiskey Southern Comfort)
  • Rum Nut Cake
    1 c. finely chopped pecans
    1 (18 1/2 oz.) pkg. butter recipe
    golden cake mix
    1 (3 3/4 oz.) pkg. vanilla instant
    pudding mix
    1/4 c. light rum (I use Southern
    Comfort)
    1/2 c. water
    1/2 c. vegetable oil
    4 eggs
    --GLAZE--
    1 stick margarine
    1 c. sugar
    1/4 c. rum
    1/4 c. water
    Grease with Crisco and flour lightly a bundt pan. Sprinkle nuts evenly over bottom of pan. Place cake mix and pudding in a large bowl and toss lightly then add next 4 ingredients. Beat with electric or hand beater for 2 minutes. Pour carefully into pan not disturbing nuts. Bake in 325 degree preheated oven for 50 to 60 minutes until lightly firm to touch. Remove from oven and place on rack carefully loosen cake form pan and center pour hot glaze over cake at once and let stand 30 minutes invert onto plate. GLAZE Boil in saucepan for 3 minutes stirring constantly and pour at once over hot cake. Distribute evenly while pouring.
  • Crunchy Comfort Pecans
    2 c. pecan halves
    1 tsp. salt
    1/2 c. Southern Comfort
    1 tsp. orange juice
    1 tsp. vanilla
    Pinch cinnamon
    Dash nutmeg
    4 tbsp. brown sugar
    Combine Southern Comfort orange juice vanilla cinnamon and nutmeg. Spread pecans in a shallow baking dish. Sprinkle with salt. Pour liquid mixture over pecans stirring until all are moistened. Marinate 1 hour stirring occasionally. Sprinkle with 1/2 of the brown sugar. Stir until all are coated and bake at 275 degrees for 30-45 minutes. Stirring every 10 minutes add remaining brown sugar. Bake another 10-15 minutes stirring every few minutes. Test for doneness by cooling and tasting a few nuts. They should be crunchy not chewy. Cool on wax paper separating with a fork as they cool. NOTE Toward the end of cooking watch them carefully they will scorch if over cooked.
