  • Stuffed Mushrooms
    1/2 lbs. medium sized mushrooms
    1/4 c butter or margarine
    1/2 c finely chopped green onion
    3 tbs bread crumbs
    1 tbs dries parsley flakes
    1. Clean mushrooms and seperate caps and stems.Arrange caps hollow side up in single layer in 10 inch round baking dish. Set aside.
    2. Dice mushroomstems finely.Combine with butter and green onions in a 1 quart glass casserole. Microwave uncovered on High for 3 to 4 mins or untill onion is tender stirring twice. Then add bread crumbs and parsley flakes. Set aside.
    3. Cover mushroom caps and microwave on High for 2 to 3 mins or untill nearly cooked. Stuff each cap with stuffing mixture. Cover and microwave again for 2 to 3 mins on High till hot.
    Makes 25 to 30 pieces
  • Curried Chicken Balls
    1&1/2 c finley minced cooked chicken
    3 Tbs finley chopped raisins
    2 Tbs dried onion flakes
    2 Tbs dried bread crumbs
    1 tsp lemon juice
    DIP
    1/4 c of mayonnaise
    1/2 tsp curry powder
    Batter
    1 egg beaten lightly
    1 c dried bread crumbs
    1. Mix together all ingredients except egg and the one cup of dried bread crumbs. Shape into 24 balls
    2. Dip balls into beaten egg and then roll in bread crumbs. Arrange 12 pieces a circle on a paper plate and microwave on High for 2 to 3 mins or untill heated through. Repeat procedure with remaining 12 pieces. Serve with curried flavored mayonnaise
  • Sweet And Sour Tuna Crackers
    1/2 7 ounce tuna well drained
    4 Tbs cream cheese softened
    3 Tbs crushed pineapple well drained
    1 Tbs white vinegar
    1/4 tsp curry powder
    24 crackers or melba toast rounds
    1. Flake tune and combine with all ingredients except crackers in a 1 quart mixing bowl. Blend thoroughly.
    2. Spread mixture on 24 crackers or melba toast rounds. Arrange 12 pieces on a paper plate and microwave on High for 1-3 mins or untill crackers are bubbling repeat for remaining crackers.
