| Description | 1/2 pound hazelnuts -- finely chopped 1 1/2 cups vodka 1/3 cup sugar 3 tablespoons water 1 teaspoon vanilla extract In a glass bottle or jar steep the chopped hazelnuts in the vodka for about 2 weeks in a cool dark place gently shaking the bottle every day. Gently pour the contents through a strainer or sieve pressing hard on the nuts to release all the flavor. Follow this by 2 strainings through slightly dampened cheesecloth or large coffee filter loosely cover the contents with plastic wrap since the process may take several hours. In a very small saucepan combine the sugar and water. Bring to a boil over moderate-high heat. Simmer uncovered for 5 minutes. Let cool to room temperature. Stir in the vanilla. Funnel into a glass bottle the funnel in the sugar syrup. Cover tightly shake to blend. Let mature at room temperature or slightly cooler for at least 3 weeks. Homemade version of Frangelico. |

Begin with gentle fruit juices. Put a little less than 1 pint orange juice and the juice of 2 or 3 lemons into a half-gallon or gallon jar.
*Before squeezing the lemons, peel the rinds very thinly and add them as well.

"4 - 5 tbsp sugar
2 oranges
1 cup orange juice
3 apples
1 bottle red wine
2 tbsp cognac
1/2 cup mandarin peel
2 cups soda water
10 ice cubes
Peel the apples and cut into small cubes. Peel the oranges, take out the pips and cut them into small cubes. Warm the orange juice, the sugar and the mandarin peels until the sugar dissolves. Mix all the ingredients - except the ice and the soda. The ice and the soda add just before serving." -
Creme de Menthe
8 cups sugar
6 cups water
1 pint 188 proof grain alcohol
1 oz pure mint extract
1 tbsp green food coloring
Bring sugar and water to a boil and simmer for 10 minutes. Cool. Add the remaining ingredients and stir. Cover and let ripen for 1 month. -
Orange Blossom Punch
1 cup frozen orange juice concentrate -- thawed
10 ounces frozen strawberry daiquiri mix concentrate -- or peach thawed
750 milliliters champagne -- see notes chilled
ice cubes
NOTES May use sparkling white grape juice in place of champagne.
In a punch bowl combine thawed concentrates. Add 4 cups cold water stir to combine. Gently add champagne or grape juice but do not stir. Serve immediately over ice. If desired garnish with strawberries and Flordia orange wedges.

"2.3 liters honey
9 liters water
4 lemons
30 g cloves
900 g sugar
1 piece scoured ginger
60 g yeast
1 piece bread
1. Spread the yeast on a piece of bread.
2. Boil the water, honey and sugar. Stand in an earthenware pot. Skim off any scum. Add lemon juice, cloves and ginger. Leave to cool. When just warm, float the bread and yeast on the top. Cover with a clean cloth. Leave for about 6-8 days.
3. Strain and bottle. Corks should be loose to start with. Leave for at least 5-6 months.
